Toasted Sandwiches

I love toasted sandwiches. We have a sandwich toaster, which is great because it means I can make a very easy hot lunch in next to no time.

My current favourite mixture (per sandwich):

2 slices of bread
loads of cheddar cheese
1 large mushroom, sliced
1tbsp sweetcorn
fresh ground pepper & chilli flakes

Pile into the toasted sandwich maker in whatever order makes most sense to you (bread on the outside is traditional) and give it five minutes.

Sounds tasty - When I used to be able to eat cheese toasty sandwiches, I would have a second one with just jam in for a dessert. Just be careful how you bite into it - the jam tends to be piping hot, but so very tasty.

I may have to stop reading this blog. It makes me hungry at those cruel, painful moments when I have no access to food.

Heather - I love mushrooms :)

Louiz - I have done it with jam... wondering vaguely about trying nutella, and maybe with one or two of those marshmallows.

Mo - I make a point of never being without access to food ;)

Love toasted sarnies - cheese, tomato slices and pesto is one of my favourite combinations - but don't always have pesto so anything with cheese - chutney, promite, mushroom, baby spinach, herbs - and mostly tomato slices - yum!
