Thai Improv

We had a couple of friends round for dinner on Friday night. Sue said she'd bring a pudding, but I didn't know what it was going to be - which gave me quite a challenge as I was trying to decide what to cook without being able to construct a view of the whole meal (though, as it happens, she decided on her dessert after I let slip what I was going to be making!)

In the end, I decided to put my hot new Thai skills to the test. What I'd actually acquired from my Thai cookery class was, more than anything else, the confidence to experiment with a new cuisine. So I just did my usual 'make it up as you go along' thing, but with Thai ingredients... which means that, as usual, the recipes I give you will be fairly approximate.

Stir-Fried Vegetable Noodles

1tbsp toasted sesame oil
1 small red onion, sliced thinly
2 cloves garlic, sliced thinly
1 red chilli, chopped finely
2tbsp sesame seeds
1 large carrot, sliced into thin strips
1 courgette, sliced into thin strips
4tbsp dark soy sauce
2tsp powdered ginger
1 tin sweetcorn
450g (3 packs) pre-cooked noodles
  1. Heat the oil in a large wok, and stir-fry the onion, garlic, chilli, sesame seeds, carrots & courgette for about five minutes.
  2. Add the noodles, soy sauce, ginger, and sweetcorn. Stir-fry until noodles are hot and vegetables fully cooked.

Sweet & Sour Peppers & Mushrooms

1tsp toasted sesame oil
1 large red onion, cut into 8ths
200g mushrooms, quartered
1 red pepper, cut into 2cm squares
1 yellow pepper, cut into 2cm squares
4tbsp tomato passata
2tbsp sweet chilli sauce
1/2 tin pineapple chunks
  1. Heat the oil in a deep pan, then fry the onion for a couple of minutes. The chunks will begin to break up.
  2. Add the peppers and mushrooms, and fry for a further five minutes.
  3. Stir in the sweet chilli sauce and the passata, and simmer until the vegetables are cooked.
  4. Add the pineapple at the end, just to heat through, and add extra chilli flakes if you need extra heat.

Vegetable Green Curry

1tsp toasted sesame oil
2 cloves garlic, sliced thinly
1 small red onion, sliced thinly
1 red chilli, finely chopped (or equivalent in chilli powder)
2tbsp green curry paste
50g coconut cream
200ml boiling water
2tsp kaffir lime leaves, sliced thinly (I didn't have any fresh ones so I used pre-sliced ones from a jar)
3 large carrots, sliced into thin circles
1 large courgette, chopped
10 large florets of broccoli
2 handfuls of frozen peas
  1. Heat the oil in a deep pan, and fry the onion, garlic & chilli for a couple of minutes.
  2. Once the onion is soft, add the boiling water, green curry paste, coconut cream, and kaffir lime leaves.
  3. Once the coconut cream has dissolved, add the carrots & courgette, and simmer until the carrots start to soften.
  4. Add the broccoli & peas, and simmer until the broccoli is cooked.

If you make these quantities, four can eat comfortably. In fact we had enough leftovers for a generous lunch the next day.

Dessert was a yummy - and, thankfully, very light - strawberry flan with ice cream. Thanks, Sue!! (And bloggers, if you've never done this with your friends, do it! It's hard to explain just how relaxing it is to only have to worry about half a meal...)

Actually I was going to have my students make some quick Thai for the lesson plan and meal next week, so this works! Thanks for sharing...and I am horrible at sharing approximate measurements; since I usually am all about a pinch of this and that...

Thanks for your comments. I wish you all the best for fair weather. My one day at Bath, was all cloudy winter weather. I had lots of plan to capture the dramatic skies in the background. All gone for a toss :)
