Who knew that quesadillas were so easy to make? Well, as it happens, Pam knew - and when I read about it on her blog, I had to have a go myself.
I only really discovered the joy of quesadillas while visiting the US last year - I went to a conference in Colorado where mushroom quesadillas were served as 'party food' at the welcome drinks evening, and then I enjoyed another one from a fast-food stall in Penn Station while waiting to come home from New York.
Speaking of which, why is fast food in the UK so completely boring? Seriously, folks - burgers, kebabs, and fried chicken?! Is that the best we can do? In the States there seems to be a 'fast' version of almost every cuisine - and Mexican definitely ranks among my favourites.
And this is so quick to make, it's perfect for a quick supper after a busy day. (I'm all in favour of super-fast meals, have you noticed...?)
Vegetable Quesadillas
Serves 2
4 flour tortillas
1 sweet pepper
6 medium chestnut mushrooms
a handful of frozen peas
25g red leicester cheese
25g mature cheddar cheese
sprinklings of parmesan cheese, black pepper, and chilli flakes (to taste)
- Finely chop the pepper, and slice the mushrooms.
- Split all the fillings into two, and spread evenly across the surface of two tortillas. Use the remaining two tortillas as lids.
- Heat a frying pan over a medium heat, and put one of the tortilla sandwiches into the pan. Continue to heat gently for a couple of minutes.
- Once the cheese has melted, flip to toast the second tortilla (seriously, wait for the cheese to melt - I tried to flip one of mine too soon, and the filling went everywhere).
- Serve as soon as the mushrooms & peppers are cooked - it doesn't take very long. You can slice it and eat with your fingers. For something a little extra, serve with sour cream, salsa, guacamole... any of the usual Mexican dips.

I grew up in New Mexico, where quesadillas are pretty standard. Sometimes people just do plain cheese. Chicken and apples are also good. If you want something more authetic, try chicken and green chili (although green chili may be hard to find outside of New Mexico).
Mmmm, I love quesadillas. They're usually an appetizer, but Hubby made some last week that were a full meal. I'm lucky - he's the cook. I'm a foodienewbie who has a 50/50 success rate.

our fillings have also included, tofu, chicken or beans but my all time fave is sweet potato with cheddar. mmmmm, it's so simple but sooo delicious!
I am a big fan of tortillas as a way of rustling up something quick and tasty. I've done something similar but instead of using two tortillas I used one and folded it in half. I found it much easy to keep the filling in after a disaster once leaving me with a massive clean up job on the cooker!
Looks yummy. And you can do this with lots of variety...BBQ flavor, perhaps lentils and cheese, or even a little fruit and spices with cream cheese for a dessert.
We eat these all the time in USA. I use high fiber, low carb tortillas, too. That way there's no quilt. Your mushroom ones look delish.

Quesadillas - one of my favorites. And my grand-daughter was begging for one for lunch today. Sadly, they were out of tortillas. I had my hopes!

MMMMM...I love Quesadillas. Breakfast Quesadillas (or even burritos) are good with mushroom, a little scrambled egg, peppers, onion. YUM!

Quesadillas are definitely popular here in California. I like making a salad and then triangle of quesadillas to go with it. Love avocados and black olives as well as cheese and onions in them.

I seriously love peas so much and I LOVE that you put them in this quesadilla!
Quesadillas are my favorite after chile relleno stuffed with cheese! Actually, I think English fast food is healthier than American. We have a lot of variety but also lots of nasty chemicals and fats pumped into them. I've also had samosas as a fast food in London, which tops my list of healthy and tasty.

The quesadillas look great - but don't envy our fast food - it is TERRIBLE for you and is the major contributor of the obesity epidemic in our country. It is full of fat and nasty stuff -

And then there's sopapillas in minute. when the kids come home from school and want something sweet? take a tortilla, smear with butter, add cinnamon-sugar, roll, microwave for about 20 seconds. hot cinnamon bread treat.
I never knew mexican food til I moved to Texas and now, 20-something years later, I wonder how in the world I could have lived without it?
I love quesadillas and I happen to know a few Mexicans who live in my area and who make some yummy ones, such as the one in your recipe. I agree with you on takeaways in the UK. But I think the situation is beginning to change and what are usually called 'ethnic' restaurants are starting to include takeaways in their menu. Fingers crossed. :-)

i love making quesadillas! i actually have a ton of sundried tomato tortillas that i need to use up. veggies are always great to include in a quesadilla.. kinda offsets the massive amount of cheese we need! you used some great ingredients!
