Menemen is the traditional Turkish method of preparing scrambled eggs, with peppers, tomatoes, and lovely fresh herbs. I only found out about this dish when we visited Turkey last year, and so it was great fun to reconstruct it for myself. This was one of the dishes I cooked with Ainsley Harriott as part of the SoupSearch competition.

Menemen (Turkish scrambled eggs)
2tbsp olive oil
1/2 red pepper
1/2 green pepper
1 large onion
1 fresh chilli
3 large tomatoes
4 eggs
Flat leaf parsley
Salt & pepper to taste

- Chop the onions and peppers into large pieces (approximately 1 inch squares), and finely chop the fresh chilli (removing the seeds)
- Heat the oil in a large frying pan, and fry the onions, peppers, and chilli until softened
- Chop the tomatoes finely, and add to the pan. Simmer for a few minutes to reduce the liquid from the tomatoes
- Break the eggs into a bowl, and break up the yolks with a fork
- Add the eggs to the pan, and stir constantly for 4-5 minutes, until the eggs are cooked and scrambled
- Add a generous handful of fresh parsley just before serving, and season with salt and pepper to taste

It looks to me like he's concentrating on the pan that he's tossing. Perhaps he doesn't want to imitate me and end up with everything all over the kitchen floor. :) IN my case, unfortunately, it was the contents of a bottle of olive oil. I picked it up and without thinking about it gave it a quick shake without holding the top on. Naturally, I ended up with oil all over the cooker, all over the worktop, all over the kitchen floor and all over me.
It looks like the Turkish version of a Denver omelette. YUM

These look amazing. When I saw Turkish in the name I thought there would be spices in there too but just salt and pepper. I'm hungry for scrambled eggs now. :) I'll go try to vote.

Looks yummy. Omelette is one of my fave during breakfast and this scrambled egg fits in well.
