Summer Vegetable Soup (200 cal)

Summer vegetable soup

I don't often make soup in the summer, but towards the beginning of the year we had a lot of days that were more suited to soup than salad. And this is a light, summery broth just packed with fresh vegetables. It's also really quick to make.

I use a vegetable stock mix that has a small amount of turmeric in, not enough to have much impact on the taste, but it does turn all the greens a little bit yellow!

At about 200 calories per bowl, this soup is perfect for a 5:2 diet day.


Summer Vegetable Soup
Serves 4

1tbsp olive oil
1 leek
2 large onions
1 courgette
1 red pepper
2 litres vegetable stock
4 carrots
1/2 cauliflower
1/2 broccoli
1/2 savoy cabbage
1 cup peas
  1. Chop all the vegetables.
  2. Heat the oil in a (very) large saucepan, and fry the leek, onions, pepper and courgettes until soft.
  3. Add the stock and carrots, and simmer for 15 minutes.
  4. Add the remaining vegetables, and simmer until the broccoli is soft. Serve immediately.

We use turmeric powder day-in and day-out in many of the dishes we make but never tried adding it to vegetable soups. Will try it soon.

I can't take soup seriously in the summer, either, but as you say, the beginning of the summer was a bit unpromising this year!

That looks delicious, and super easy to make! I'll likely make it without the peas though. I must be the only vegetarian who can't do peas :) Thanks for a great recipe; never thought to make a soup in the summer either but may have to give this one a whirl.
