I don't often make soup in the summer, but towards the beginning of the year we had a lot of days that were more suited to soup than salad. And this is a light, summery broth just packed with fresh vegetables. It's also really quick to make.
I use a vegetable stock mix that has a small amount of turmeric in, not enough to have much impact on the taste, but it does turn all the greens a little bit yellow!
At about 200 calories per bowl, this soup is perfect for a 5:2 diet day.
Summer Vegetable Soup
1tbsp olive oil
2 large onions
1 red pepper
2 litres vegetable stock
1/2 savoy cabbage
1 cup peas
- Chop all the vegetables.
- Heat the oil in a (very) large saucepan, and fry the leek, onions, pepper and courgettes until soft.
- Add the stock and carrots, and simmer for 15 minutes.
- Add the remaining vegetables, and simmer until the broccoli is soft. Serve immediately.
